Gluten-Free Cherry Cake

It is a delicious cake with low sugar content and full of nuts: walnut and almond. It is excellent for breakfast with honey and marmalade.
The preparation takes 15 minutes and the baking 50 minutes.

Ingredients:

4 medium
Eggs
50g
50g
Brown sugar
Honey
100g
Gluten-free flour (Dove Farm)
40g
Maize flour
10g
Potato starch
1 tsp
Baking powder
1 tsp
Xanthan gum
150 g
Pitted and cut fresh cherry
60g
Walnut chopped
60g
Almond chopped

Method:
·      Set the oven to 1800C
·      Separate two eggs Into 2 bowls
·      Mix the flours, with xantan gum and baking powder
·      Wisk the egg whites until gets hard
·      Add two more eggs, the sugar and honey  to the egg yolks,  mix them until gets white.
·      Add all the remaining ingredients and mix them well.
·      Finally add the egg whites to the mixture.
·      Place into a baking tin about with 20 cm diameter
·      Place the baking tin into the preheated oven for 50 minute
