When people think of Christmas cakes, they often think of fruit cakes. The thick cake with bits of fruit and nut and is sometimes aged with good brandy just screams Christmas. Many people look forward to it each year. Others, however, after years of eating the same cake, begin looking for something else, for different Christmas cake ideas.
If you are someone who is looking for some Christmas cake ideas, but don't exactly want to break the tradition and spirit of the season, then consider Stollen! It's a great cake of German origins and it is eaten during the holidays. Bread-like and fruit-cake like at the same time, it can be seen as a variation to what you've enjoyed year after year!
To make Stollen, you will need the following:
3 1/3 cups all-purpose flour
1 cups raisins
1 cups almonds (ground)
1 cups cream cheese
1 cup candied orange peel (chopped)
2/3 cup butter (cold)
cup icing sugar
cup sugar
cup currants
cup butter (melted)
9g vanilla sugar
8g baking powder
5 drops lemon flavoring
4 drops almond flavoring
1 bottle rum flavoring
2 eggs

Instructions:
1) Grease a 15€ by 10€ jelly roll pan with some butter.
2) In a large bowl, sift all your dry ingredients, except the whole fruit and nuts, together till you get an even consistency and each of the ingredients are well blended.
3) Add the flavoring and the eggs, and knead with your hands. Try adding a bit the wet ingredients a little at a time, making sure that you don't flood the dry ingredients. This will also help you control the mixture. Start with the eggs and drops of flavorings before moving on to the rum flavoring.
4) Take the cold butter and cream cheese and begin mixing it in with the dry ingredients. You can also use an electric mixer for this, but your hands are often better. What you want is a dough-like consistency. Once this is smooth, begin adding the nuts and fruit into your dough, kneading it till you feel there is a more or less even distribution
5) Put your dough into the jelly roll pan.
6) Bake in an oven that's been preheated to 160C for an hour.
7) As soon as it is out of the oven, brush the cake with melted butter and sift icing sugar on top.

8) You can store the cake in the refrigerator, but it is best served fresh from the oven. If this is not an option, simply heat up each slice before serving.

Yet the diet of an average American includes only about 1 percent of these important foods. Why? Maybe we're just confused. The National Center for Nutrition & Dietetics reports that about 70 percent of consumers don't understand which foods are in the "whole grains" category.
The Food and Drug Administration (FDA) stipulates that any food labeled "whole grain" must contain 51 percent or more whole-grain ingredients (by weight). This is a reference to the entire edible part of a grain, including the germ, which is actually the sprout of a new plant; the endosperm, where the grain stores its energy; and the bran, the grain's high-in-nutrients outer layer. But refined or processed grain products -- such as bleached flour and white bread -- have the bran and germ portion of the grain removed during milling. This process makes grain lower in fiber and removes about 80 percent of the nutrients.

Foods that contain whole grains, on the other hand, provide a number of nutritional benefits. According to the American Cancer Society, they may reduce risk of developing cancers of the colon, stomach and endometrium, as well as reducing risk of heart disease They also have a positive effect on carbohydrate metabolism and control of blood sugar, which may decrease risk of developing adult-onset (Type II) diabetes.

But how do you know if the foods you're eating contain whole grains? Any grain -- wheat, barley, corn, millet, oats, rice, rye -- can be refined, so don't assume if you're eating wheat bread, for example, that your sandwich is made from unmilled grains. It's not "whole-wheat bread" unless it's been made with 100 percent whole-wheat flour; if the label reads simply "wheat bread," the product may have been made with combination of whole-wheat and refined white flour. And don't judge by appearances: Brown bread, often assumed to be healthier, may be that color because of added molasses or caramel coloring, not because it's a whole-grain product.

It may seem obvious, but the only way to know for sure is to check the Nutrition Facts label on the package. The first ingredient listed is the ingredient found in the largest quantity in that food item. Look for the word "whole" in the first few ingredients (e.g., whole wheat, whole oats, whole-grain corn, whole rye). Check also when foods contain barley, brown rice, bulgur, quinoa, amaranth, buckwheat and millet to see if they've been refined.

Breads and breakfast cereals (like oatmeal, bran flakes and shredded wheat) provide most of the whole grains in the typical American diet. But don't forget the others: Barley or quinoa (a tiny, bead-shaped grain that takes half the cooking time of rice) is great in soups, and bulgur (wheat kernels) is delicious in salads. Try whole-wheat pasta, or side dishes like brown rice or corn. You even can get whole grains in snacks, such as whole-wheat crackers or air-popped popcorn.

In addition to lowering your risk of developing cancer and heart disease, minimally processed grains are a low-fat source of complex carbohydrates, which fuels your body, and they contain substantial amounts of fiber, which is important for gastrointestinal health. And fiber not only helps keep your digestive system in top condition, it also helps you feel full on fewer calories. In fact, a USDA study found that people who consumed 18 to 36 grams of fiber a day absorbed 130 fewer daily calories.

The American Cancer Society's dietary recommendation is three servings of whole grains per day. So what's one serving? It could be one slice of whole-wheat bread, a half-cup of cooked oatmeal or pasta, half an English muffin, three to four small crackers, or a half-cup of popped popcorn. Quinoa Indian-style Salad
1 cup quinoa
1 cup of water or vegetable stock
Salt
1 tbsp oil
1 tsp butter
cup finely chopped red onion

cup finely cubed carrots
1 tbsp finely minced cilantro
Lime juice
Green chili (if you want to add a little spicy kick)
2 tbsp mustard seeds
cup of finely chopped apple
cup of nuts (almonds, cashew nuts, walnuts, or roasted peanuts)
1. Wash the quinoa thoroughly and soak it in water for up to ten minutes to eliminate the bitter taste from the saponins that cover it.
2. Boil water or vegetable stock, then add the quinoa. Add salt to taste and the butter. When the mixture starts to boil, turn to medium-low heat and simmer for up to fifteen minutes.
3. Saute the chopped vegetables and fruit in little oil in a wok. Don't overcook them.
4. Let the cooked quinoa to cool for a few minutes. Use a fork to fluff and toss it up before you add the cooked vegetables and fruits. When you add the veggie-fruit mix into the quinoa, use a big table spoon and add one at a time; this will ensure that the quinoa will mix evenly and that there will be no clumps.
5. Mix the salad well. Add salt and pepper if desired. Garnish with cilantro and nuts. This salad can be served either warm or cold.
