Gluten-Free Polenta Cheese Pie




This pie is suitable for party, lunch or family celebration.   a slice is around  80- 100 kcal 

Ingredients for 6 persons

Medium size eggs
 4
Butter
100g
Polenta
1 cup
Cottage cheese
450g
Milk
200ml
Baking soda
1 tsp
Sugar
100g
Honey
1 tbsp
Cinnamon
1tsp
Sliced apples
2 medium

Method:
·      Preheat the oven at 1800C
·      Butter an about 25 cm diameter pie dish
·      Cook the polenta in the milk about 6-7 minutes stirring it continuously
·      Mix the butter and the cooked polenta
·      Add the egg yolks, sugar and honey
·      Add the cottage cheese and the cinnamon, mix them well
·      Beat the egg whites and fold it to the cheese mixture
·      Transfer into the pie dish
·      Decorate the top with sliced apples
·      Place the pie into the preheated oven for another 40 minutes until it gets light brown.

Summer apple and Cornmeal Cake

It is a light gluten-free treat.
Ingredients:
Summer apple
16-18 small
Corn meal
250 ml
Honey
2 tbsp
Cinnamon
1 tsp
Egg
4
Butter
80g
Milk
250ml
Water
500ml
Salt
¼ tsp

Method:
·      Prepare the apples: half them and take the cork away
·      Cook the corn meal in water and milk stir it to avoid getting lumpy
·      Preheat the oven to 1800C
·      Butter a tin with the size about 20cm x 25 cm
·      Beat the eggs with honey
·      Add butter and the eggs to the cooked corn meal
·      Transfer it into the tin
·      Place the apples on the top
·      Place it into the preheated oven for 50 minutes

Gluten-free gingerbread man

It is a great healthy Christmas treat for people  with coeliac condition.
Ingredients for 10 men:
Quinoa flour
30g
Rice flour
20g
Buckwheat flour
40g
Soy  flour
30g
Gluten-free plain flour
60g
Xanthan gum
1 tsp
Baking soda
1 tbsp
Nutmeg  ground
1 tbsp
Cinnamon ground
1 tbsp
Allspice  ground
½  tbsp
Cloves  ground
½ tbsp
Ginger  ground
2 tbsp
Honey
3 tbsp
Sugar
60g
Maple syrup
1 tbsp
Butter
70g
Egg
1

Preheat the oven to 1800C
Mix the flours, the xanthan gum and the butter well
Add the remaining ingredients and mix them well
Roll out the dough to 0.5 cm thickness
Cut the figures
Line the baking tin with greaseproof paper
Place the figures into the tin

Bake them for 10 minutes
