Gluten, Egg and Dairy Free Gingerbread

Ingredients

Gluten-free self- rising flour
100g
Almond flour
80g
Honey
4 tbsp
Coconut oil
70g
Bicarbonate of soda
1 tsp
Ground ginger
1tsp
Cinnamon
1tsp








Method

Mix the flour, bicarbonate of soda, ginger and cinnamon in a bowl.  
Add the coconut oil and blend until the mix looks like breadcrumbs.
Stir in the honey.
Preheat the oven to 180C.
Roll the dough out to a 0.5cm thickness on a lightly floured surface.
Using cutters cut out the shapes
Place them on the greased baking tray, leaving a gap between them.
Bake for 12 minutes, until lightly golden-brown.

Chocolate Cake Deprived Of Flour

It is a delicate gluten-free cake containing almond and desiccated coconut.

Ingredients:
Eggs
4 medium
Almond ground
150g
Ground coffee
1 tbsp
Sugar
100g
Desiccated coconut
3 tbsp
Baking soda
1tsp
Dark chocolate melted
100g


 tbsp:  table spoon
 tsp: tea spoon

Method:
·      Preheat the oven to 1800C
·      Prepare a 20-25 cm diameter baking tin with a thin layer of coconut oil and corn starch
·      Separate the egg yolks and egg whites into 2 different bowls
·      Beat the egg whites
·      Add the sugar to the egg yolks and mix them well
·      Blend the remaining ingredients
·      Fold the egg yolks in
·      Transfer the batter into the tin and place it into the oven
·      The baking time is around 30 - 40 minutes
·      When the cake is cold pour the molten chocolate on the top and place it into the refrigerator until you serve it.

Gluten-Free Cheese Pie

This pie is suitable for party, lunch or dinner, served with salad, it is appetising and easy to prepare.

Ingredients for 4 persons

Medium size eggs
 3
Butter
100g
Gluten- free flour
200g
Cottage cheese
400g
Water
150 ml
Baking soda
1 tsp
Xanthan gum
1tsp
Salt
1tsp (½ in the pie and ½ in the cottage cheese)
Pepper
Up to your taste
Dill
1tsp

Method:
·      Preheat the oven at 1800C
·      Butter an about 25 cm diameter pie dish
·      Mix the flour with baking soda and xanthan gum
·      Use a bowl to mix well the butter and the flour together
·      Add the water step by step
·      Roll the cake and transfer into the pie dish
·      Place the pie into the oven for 5- 7 minutes
·      Place the cottage cheese into a bowl and add the egg yolks, mix them well together and season it.
·      Beat the egg whites and fold it to the cheese mixture
·      Transfer the cottage cheese mixture into the pie
·       Place the pie into the oven for another 30 minutes until it gets light brown.
