Creative Gluten-Free Diet

by Ilona Stahl

Changing to a gluten-free diet can be difficult at first. You are like a pregnant woman who has a lot of restrictions when it comes to food. It can be equally difficult to look for gluten-free ingredients for the food you want to eat. Since you have health restrictions, you couldn't be more careful.
But you have to keep in mind that choosing a gluten-free diet is like cleansing your body. The following foods usually have gluten ingredients and can be very difficult to modify.
€ oats, whole grain cereal, and nutri-grain bars for breakfast
€ cakes, biscuits and cookies for snack
€ French fries and gravy for fried chicken

One thing that you can do to avoid totally giving up your favorite food is to be creative with food preparation. Gluten sensitivity may be difficult at first but with a little creativity, you can definitely manage it.
The following foods are naturally gluten-free. You are giving yourself a favor when you eat them as they are naturally healthy. Examples of healthy foods are:
€ fresh eggs
€ fruits and veggies
€ milk products
€ natural beans and nuts (ex. peanuts, almonds, cashew)
€ fresh meat from fish and poultry. You need to ensure that they aren't marinated, breaded, or coated.
A trail mix for breakfast is a healthy way of fighting this dangerous protein. You can mix raisins, cranberries, almonds, cashews and dried sunflower seeds. Adding peanuts can be done too. It is a filling recipe which will satisfy your cravings for your old diet.
For lunch, you can have the same trail mix, boiled eggs and rice noodles.
A roasted chicken stuffed with rosemary and onions with vegetables on the side is perfect for dinner. These recipes are very easy to prepare. And they're all gluten-free and delicious.
Knowing what products have this dangerous protein is a great way of sticking to your gluten-free diet. If you are craving for your old diet, prepare them using gluten-free ingredients.
Products containing gluten that you need to avoid are:
€ Cookies as well as biscuits
€ Bread, cakes and pastries
€ Pasta and noodles
€ Sausages
€ Luncheon meat
Be thankful for innovative people and companies for creating healthy products. You can now purchase gluten-free candies and breads from your local grocery store. Don't forget to check the label though. Restaurants are also becoming sensitive to other people's health that they also offer healthy meals.
You can check with your nutritionist or dietician if you want to be guided better with your gluten allergy.

How can I start?

1.     At first and the most important step is that you have to get rid off the unsuitable food in your kitchen
·      Empty the food cabinet
Should empty the food cabinet and separate the gluten free flour, grains, cereals and dry legumes in one side of the kitchen table.
·      Check the list of ingredients
If you keep ready made soups and sauces like pasta sauce, tomato sauce, gravy sauce, and soy sauce you must read the list of ingredients carefully specially looking for the substances used for thickening and emulsifying.
The gluten free stuff suitable for thickening sauces are: tapioca starch, corn starch, potato starch and another very popular gluten free emulsifier and thickener is xanthan gum. - It is made by fermenting corn sugar with bacteria. Xanthan gum has become popular in the gluten free circles. It helps give the dough a sticky consistency. Xanthan gum is safe when up to 15 grams/day are taken. (it is lot) It can cause some allergic effects such as flatulence and bloating, flu-like symptoms, nose and throat irritation.   It’s perfectly reliable to consume if you don’t have any allergy issues as mentioned above. However, most people wouldn’t prepare a salad dressing at home with xanthan gum, you would use it when it is really necessary; adding to the gluten free dough or cake pastry. -
Do not forget to check the stock cubes, dip sauces and humus!
If you find food you are not sure about you must treat it as it contains gluten.
Keep the gluten –free food and give away others.
2.     You should keep the gluten-free bread separately and you use different board for this bread.
3.     Use different toaster for gluten free food.
4.     It is necessary to have some special baking tins for bread, cakes,
cup-cakes and frying pan for making pancakes and other dishes.
5.     Guidelines to start your diet
·      Talk to a nutritionist about your diet and learn how to make your eating plan.
·      Make a list of the food available for you
·      Get into the habit of reading the food label very thoroughly.
·      Eat the naturally gluten- free foods – fruits, veggies, meat, nuts
·      Make a list of food what you really like
·      Learn how to cook- you can start with very simple dishes.
·      Get a gluten free cookery book
·      Make a list of your preferred cookery blogs
·      Make a list of your favourite restaurants providing gluten free meal
·      List of shops providing gluten free bread, cakes, pizzas,

Fresh Salad Is a Healthier Snack   by Mazen Hawa

Nothing can be better that a fresh salad in a hot summer day! The added advantage of having a salad is that they will not be adding extra calories that you detest or at least crave to reduce. Many of us try to cut down on calories and end up every week, with a new one because we have left it somewhere in the middle. The primary culprit behind this is that mid-time snack we splurge on and enjoy, to feel guilty later on. Even though we know it is not good to have that extra bowl of cheesy fries, we just indulge, because nothing else is in front of us.
The best way to stop this craving is to find some great salad to enjoy and cut down calories. I know, salad may not sound as interesting and exciting as a cheesy fry, but there are ways in which we can make it colourful.
Salad, although brings to our mind of those mixtures of veggies, fruits and all that nourishing nuts, may not sound so tempting when we are ravenous. However, when we give it a gentle twist to it and have every ingredient put together to make it more scrumptious, it can turn out to be a great snack to have and relish.
There are ways in which you can make a salad mouthwatering and delicious:
€ Fresh salads made of just fruits and vegetables may not sound so tempting. A small amount of your favourite dressing added to it, can add on to its appeal.
€ Nuts are nourishing and contain far fewer calories than our cheesy fry. Add a handful of mixed nuts, to make that a significant twist in the middle. This salad can make a healthy, nutritious snack.
€ Why not add a few pieces of meat, lean pieces, to make it nutritious, but at the same time, not calorie full.
There are many other ways by which you can mix and match to produce some outstanding salads. If you do not have enough ingredients, try out some salad joints, which specialise especially in this healthy snack item.
