Gluten-Free Cheese Pie

This pie is suitable for party, lunch or dinner, served with salad, it is appetising and easy to prepare.

Ingredients for 4 persons

Medium size eggs
 3
Butter
100g
Gluten- free flour
200g
Cottage cheese
400g
Water
150 ml
Baking soda
1 tsp
Xanthan gum
1tsp
Salt
1tsp (½ in the pie and ½ in the cottage cheese)
Pepper
Up to your taste
Dill
1tsp

Method:
·      Preheat the oven at 1800C
·      Butter an about 25 cm diameter pie dish
·      Mix the flour with baking soda and xanthan gum
·      Use a bowl to mix well the butter and the flour together
·      Add the water step by step
·      Roll the cake and transfer into the pie dish
·      Place the pie into the oven for 5- 7 minutes
·      Place the cottage cheese into a bowl and add the egg yolks, mix them well together and season it.
·      Beat the egg whites and fold it to the cheese mixture
·      Transfer the cottage cheese mixture into the pie
·       Place the pie into the oven for another 30 minutes until it gets light brown.

Gluten-Free Sweet Bread
This sweet bread is convenient to eat with soup or cheese or cold meat. The preparation of the dough does not require extra baking or cooking skills.



Ingredients for 4-8 slices of bread:

Milk
150ml
Sugar
30g
Butter
30g
Egg yolk
1
Gluten-free flour
250g
Dry yeast
½ pack
Xanthan gum
1 tsp
Egg
1 small for glazing the top

Method:
·      Measure the ingredients
·      Pour 100g of lukewarm milk into a mug add 2tsp of sugar and the yeast, wait until the yeast starts working
·      Mix the butter and the flour well together
·      Add the rest of the ingredients and the yeast into the flour
·      Make a light dough
·      Leave it at warm place for 30 minutes
·      Butter a circular shape baking tin
·      Preheat the oven for 1800C
·      Pour the dough onto the floured work surface
·      Using your flour covered hand make golf ball size balls and place them together in the baking tin
·      Glaze the top with egg
·      Place the tin into the preheated oven for 20-30 minutes.

Spring Cleaning, Detoxification of Your Body


Your body is a delight to toxins. You are continuously inhaling airborne particles and consuming a wide variety of foods, drinks.  There are too many sources of contaminants in the air, food and water. Among with lemon juice you should drink 1 or 2 cups of green tea per day, this superfood powers detox. The effect is better if you mix the green tea with cucumber. Green vegetables like broccoli, cabbage, sprouts and kale are nutrient-dense foods providing wide range of minerals; calcium, potassium, phosphorus, magnesium and selenium. They are full of vitamins; vitamin A, vitamin C, range of vitamin B-s, folates and pantothenic acid.  Many detox diets list garlic as a crucial piece of the puzzle. The reason is that garlic boosts up the immune system as well as helping out the liver. Some detox diets require you to consume ginger root. If you add grated ginger to hot water makes the water taste better. Ginger has medicinal value dates back to ancient Chinese civilizations, and one that is still believed to offer many health benefits. Turmeric has huge healthy effect on the liver. You can drink it as a tea or sprinkle it on you daily food and smoothie. Give your liver a big boost with cleansing action of watercress.  Add olive oil to your smoothie and your salad dressings in order to generate your liver to get rid off its gallstones.

Hungarian Gluten-Free Carnival Scone

It is a traditional Hungarian carnival scone similar to doughnut.  Traditionally it is fried, but this is particularly baked in the oven making it lighter.
Ingredient for 6 scones:
Gluten-free flour
  130g
Butter
13g
Sugar
2 tbsp
Egg yolk
1
Milk
80ml
Fresh yeast
8g
Jam
1 tsp/scone





 Method:
Add the yeast and 1 tsp of sugar into 50ml lukewarm milk and wait until the yeast rises.
Mix all of the ingredients well and wait until the dough rises to its double size covered by a kitchen cloth.
Roll the dough into 2 cm thickness and cut the scones by using a glass.
Preheat the oven to 1600C.
Butter a backing tin and place the scones far away from each other.
Leave it for 15-20 minutes and place the tin into the oven
Baking time is 20 minutes.
Eat it with a teaspoon of jam.
