Gluten-Free Bread

If you are on strict gluten-free diet and you are avoiding processed foods, here it is a tasty home made bread for you.

Ingredient:
Dry yeast
½ of a pack
Gluten-free flour
200g
Flax seed flour
2 tbsp       ground seeds
Chia seed flour
2 tbsp       ground seeds
Butter  melted
100 g
Egg yolk
2
Salt
1 tsp
Xanthan gum
1 tsp
Sunflower seeds
1 tbsp
Pumpkin seeds
1 tbsp
Water
Small amount if it is needed

Method:
·      Mix the flours, xanthan gum and the butter well
·      Add the remaining ingredients and dough it well
·      Be careful with the water, the dough should be soft but not runny.
·      Leave the dough for 30 minutes
·      Transfer the dough into a well buttered small soup pan, put the lid on and leave it for 50 minutes
·      Preheat the oven at 2000C
·      Water the top of the bread and with a wet knife cut the top into quarters, water the inside of the lid.
·      Place the pan with the lid on into the oven for 45 minutes (so you can see that you cannot use a pan with plastic handle)
·      After 45 minutes take the top off and bake the bread for another 5-8 minutes.
·      Fold it onto a wooden chopping board for cooling

Gluten-Free Cheese Pie

This pie is suitable for party, lunch or dinner, served with salad, it is appetising and easy to prepare.

Ingredients for 4 persons

Medium size eggs
 3
Butter
100g
Gluten- free flour
200g
Cottage cheese
400g
Water
150 ml
Baking soda
1 tsp
Xanthan gum
1tsp
Salt
1tsp (½ in the pie and ½ in the cottage cheese)
Pepper
Up to your taste
Dill
1tsp

Method:
·      Preheat the oven at 1800C
·      Butter an about 25 cm diameter pie dish
·      Mix the flour with baking soda and xanthan gum
·      Use a bowl to mix well the butter and the flour together
·      Add the water step by step
·      Roll the cake and transfer into the pie dish
·      Place the pie into the oven for 5- 7 minutes
·      Place the cottage cheese into a bowl and add the egg yolks, mix them well together and season it.
·      Beat the egg whites and fold it to the cheese mixture
·      Transfer the cottage cheese mixture into the pie
·       Place the pie into the oven for another 30 minutes until it gets light brown.

Gluten-Free Sweet Bread
This sweet bread is convenient to eat with soup or cheese or cold meat. The preparation of the dough does not require extra baking or cooking skills.



Ingredients for 4-8 slices of bread:

Milk
150ml
Sugar
30g
Butter
30g
Egg yolk
1
Gluten-free flour
250g
Dry yeast
½ pack
Xanthan gum
1 tsp
Egg
1 small for glazing the top

Method:
·      Measure the ingredients
·      Pour 100g of lukewarm milk into a mug add 2tsp of sugar and the yeast, wait until the yeast starts working
·      Mix the butter and the flour well together
·      Add the rest of the ingredients and the yeast into the flour
·      Make a light dough
·      Leave it at warm place for 30 minutes
·      Butter a circular shape baking tin
·      Preheat the oven for 1800C
·      Pour the dough onto the floured work surface
·      Using your flour covered hand make golf ball size balls and place them together in the baking tin
·      Glaze the top with egg
·      Place the tin into the preheated oven for 20-30 minutes.
