Gluten-Free Hungarian Fruit Cake

It is a delicious cake with low sugar content and full of
nuts: walnut and almond. It is excellent for breakfast with honey and
marmalade.
The preparation takes 15 minutes and the baking 50 minutes.
Ingredients:
4 medium

Eggs
|
100g
|
Brown sugar
|
100g
|
Gluten-free flour (Dove Farm)
|
40g
|
Maize flour
|
10g
|
Potato starch
|
1 tsp
|
Baking powder
|
1 tsp
|
Xantan gum
|
100 g
|
Sultana
|
60g
|
Walnut chopped
|
60g
|
Almond chopped
|
Method:
·
Set the oven to 1800C
·
Separate two eggs into 2 bowls
·
Mix the flours, with xanthan gum and baking
powder
·
Whisk the egg whites until gets hard
·
Add two more eggs, the sugar to the egg yolks
and mix them well until gets white.
·
Add all the remaining ingredients and mix them
well.
·
Finally add the egg white to the mixture.
· Transfer the pastry into a baking tin ( 25cm x 10cm x 8cm)
·
Place the baking tin into the preheated oven for
50 minutes.
Optional: Cover the cold cake
with marzipan
