Gluten-Free Pumpkin Pie

It is a delicious gluten and sugar free dessert.
Ingredients for 6 persons

Pastry:

Gluten-free self rising flour
100g
Buckwheat flour
80g
Maize flour
20g
Potato starch
20g
Xanthan gum
1 tsp
Butter
100g
Egg
1 medium
Milk
2 tbsp
Filling:

Cooked pumpkin
500g
Walnut
80g
Eggs
2 medium
Yogurt
2 tbsp
Agave syrup
1 tbsp 
Nutmeg
½ tsp
Cinnamon
½ tsp

Method:
·      Dice and cook the pumpkin
·      Turn on the oven to 180 0C
·      Mix the flour and the butter well
·      Add the eggs and the milk to the mixture and make a dough
·      Transfer it into a buttered pie dish (25 cm diameter)
·      Place it into the preheated oven for 10 minutes
·      Filter the pumpkin
·      Homogenise the ingredients of the filling in a food mixer
·      Take out the pastry from the oven and pour the filling on

·      Place the pie back to the oven for another 20-25 minutes

Comparing a Gluten Free Diet and a Yeast Free Diet

I often give advice and information on anything and everything gluten free. Also, I am frequently asked what the relationship is between a gluten free diet and a yeast free diet. Since these topics come up frequently, I would like to address the differences and similarities between these two diets. Before we discuss the differences between the two, let's start by explaining what exactly the two different diets are and why someone would want to begin one of them.
A gluten-free diet is a diet that removes all gluten containing foods from a person's diet and thus prevents gluten from being ingested by the body. Gluten can be primarily found in wheat, barley and rye based foods. There are a few other grains that contain gluten; however they are not commonly used and are less important to focus on. There are many reasons why a person would want to eat a gluten free diet. The primary reason for doing so is if a person is diagnosed with celiac disease or is found to be gluten intolerant. Celiac disease is an autoimmune response to eating gluten containing foods and gluten intolerance is the general inability to process the protein gluten as it enters the body's intestines. If a person has either of these conditions, it is vital to their health that they stick to a strict gluten free diet and to ensure that they do not digest any gluten.

A diet that eliminates yeast is a completely different entity. Yeast is a microorganism that lives in all of our bodies, and in breads it is used to make dough's rise and be fluffy. A yeast free diet is one that eliminates all foods that have a lot of carbohydrates or uses yeast as a baking agent. Sugar, flour, milk, and rice are just a few of the foods that need to be avoided while on a yeast free diet. Instead, a person would want to eat many fruits, vegetables, nuts and meats as their primary diet. if you are asking yourself why would a person need to eliminate yeast from their diet, the answer is simple: infection. Basically, a person will exclude yeast from their diet in order to cure infection from bacteria called Candida. Candida naturally occurs in the body, but an imbalance can lead to many irritable symptoms and a need to cleanse the body. This is done by eating foods that 1; do not contain any yeast in them and 2; by eating foods that do not stimulate the growth of yeast in the body.
So what is the difference between the two? Well a diet removing gluten is the elimination of a specific protein from the body in order to accommodate dietary restrictions, and a diet removing yeast is primarily used to treat a yeast infection.

Pancake day is today!


Gluten-Free Pancake


The pancake in my kitchen is has a central role
  • ·      Easy to prepare the batter
  • ·      Frying is quick
  • ·      It can be used in many ways

If you need a quick and nutritious dish the pancake is very handy.  It is possible to use for pudding, for main course or a quick snack. In the preparation of pancake I use different gluten-free flours: doves farm gluten-free plain flour only or mixed with gram or buckwheat or corn meal in 1: 1 ratio. In this case the strong taste of buckwheat or gram flour is overpowered by the doves farm flour.
Using 1 large size egg for the batter you can get approximately 6-8 pancakes. If you need more you just multiply the ingredients. Frying the batter I use pure corn oil, the olive oil has lower boiling point.

Ingredients:

1 mug  (200ml )
pinch
1 cup  ( 100ml)
2 tsp
1 cup  (100ml)
2 tbsp
medium size egg
gluten-free flour
salt
milk
corn oil
water about
corn oil for frying



Making the batter use the hand whisk. The water is the last of ingredients you add to the batter slowly until the viscosity of the batter will be similar to yogurt. For frying I use a non-stick coated frying pan. I heat a ½ teaspoon of oil and add a big serving spoon of batter.




 Cheese pancakes

This is nutritious pudding, suitable for diner party if you serve high calorie content soup as a main course. (lentil soup, fish soup or goulash soup)

Ingredients for 4 persons:------2 pancakes / person

1   (250g)
1   
2 medium
2  tbsp 
handful
5 drops
100 ml 

mascarpone cheese
quark
eggs
honey
sultana
vanilla essence
cream fresh

Method:
You will need two medium size bowls and a rectangular shape ovenproof dish (around 20cmx30cm).
Separate the egg yolk from the egg white and collect them in the bowls.
Beat the egg whites into hard foam using hand whisk.
Mix the cheeses, egg yolks, vanilla essence, honey together forming a homogenous cream.
Add the sultanas
Finally fold the egg whites very carefully.
Stuff and roll 8 pancakes and place them into the buttered rectangular dish.
Place the dish into a preheated  (1800C ) and leave it for 10 minutes.
Serving:
Place 2 pancakes on a dessert plate pour cream fresh on it and decorate with summer fruits.
