Gluten-Free Chocolate
Muffin
These
muffins contain nuts and seeds, which keep you healthy.
They are rich in energy, protein, packed with antioxidants,
vitamins, minerals and omega-3 fatty acids.
Ingredients for 12 medium size muffins

large eggs

50 g
|
butter
|
2 tbsp
|
honey
|
100g
|
mixture of grind pumpkin seeds, sunflower seeds and
walnuts
|
80 g
|
almond flour
|
10g
|
potato starch
|
2tbsp
|
cocoa powder
|
1 tsp
|
cinnamon
|
½ tsp
|
nutmeg
|
½ tsp
|
Xanthan gum
|

Method
Place the eggs with the soft butter in a
medium size bowl beat with the electric
hand whisk until it gets fluffy and smooth.
Add the flour, xanthan gum, honey, cocoa
powder, cinnamon and nutmeg and beat well.
Add the remaining ingredients and stir to
combine.
Place
a spoonful of muffin mixture into each muffin case, filling each to just over
half way.
Bake
in an preheated oven set at 1800C for 10-15 minutes.
