Gluten-free brioche

Recommended for breakfast or tea with honey and jam.
Ingredients:
Gluten-free plain flour
150g
Buckwheat flour
70g
Rice flour
30g
Potato starch
10g
Xanthan gum
1 tsp
Butter
100g
 sugar
2 tbsp
Egg
3 medium
Milk
100ml
Yeast
1 sachet
Egg  yolk


Method:
·      Pour the lukewarm milk onto a mug, add 2 tsp of sugar and yeast, leave it until it gets light and frothy.
·      Rub the butter into the mixture of flours by hand until looks like breadcrumbs
·      Add the eggs, milk and yeast and mix to a soft dough.
·      Cover and leave it for 30 minutes
·      Heat oven to 1800C
·      Place the dough into 9 cups
·      Brush the top of the brioche with egg yolk
·      Place into the oven for 30 minutes
