Gluten-free brioche

Recommended for breakfast or tea with honey and jam.
Ingredients:
Gluten-free plain flour

150g
|
Buckwheat flour
|
70g
|
Rice flour
|
30g
|
Potato starch
|
10g
|
Xanthan gum
|
1 tsp
|
Butter
|
100g
|
sugar
|
2 tbsp
|
Egg
|
3 medium
|
Milk
|
100ml
|
Yeast
|
1 sachet
|
Egg yolk
|
Method:
·
Pour the lukewarm milk onto a mug, add 2 tsp of
sugar and yeast, leave it until it gets light and frothy.
·
Rub the butter into the mixture of flours by
hand until looks like breadcrumbs
·
Add the eggs, milk and yeast and mix to a soft
dough.
·
Cover and leave it for 30 minutes
·
Heat oven to 1800C
·
Place the dough into 9 cups
·
Brush the top of the brioche with egg yolk
·
Place into the oven for 30 minutes
